1Mix milk and water with active dry yeast and add to bread machine pan .milk: 3/4 c, water: 4 tbsp, active dry yeast: 2.25 tsp

2In a separate bowl, mix together flour , whole wheat flour , vital wheat gluten , and salt and add to the bread machine pan .flour: 1 c, whole wheat flour: 2 c, vital wheat gluten: 3 tbsp, salt: 1/2 tbsp

3Start dough cycle. Check dough after ⏱️ 5 minutes of mixing. Add water or flour if needed.water: 1-2 tablespoons, flour: 1-2 tablespoons

4After rise, punch down on lightly floured surface.

5Shape into rectangle and roll into jelly roll shape.

6Put in greased loaf pan, seam down. Cut ?optional deep along top, leaving 1 inch on either end uncut.?optional: 1/2 inch

7Bake in ⏱️ 30-45 minutes in a 350° oven.

8Let rest for ⏱️ 10 minutes , then remove from pan. Allow to cool completely before slicing.
